Effects of Gamma Irradiation and Cold Storage on Total Microorganisms and Fragility Kwetiau

High air content causes the age of shortening. This causes producers to add formalin to their kwetiau. Gamma irradiation is a method of extending very efficient storage life and does not significantly change the texture in use in kwetiau. The test was performed by irradiation of the sample using doses of 0, 2, and 4 kGy with a dose rate of 1 kGy per hour followed by ALT storage, total coliform, Salmonella spp D value 10 antibiotic sensitivity and his breaking power. The results showed that the combination of gamma irradiation with cold storage up to 6.2 log CFU / g of aerobic bacteria and 5.8 log CFU / g of coliform bacteria at 4 kGy dose and decreased up to 4.9 log CFU / g of aerobic bacteria and 4, 6 log CFU / g coliform bacteria at dose of 2 kGy. Bacteria E scherichia coli isolated has a D value 10 of 0.403 kGy which is sensitive to amoxicillin and tetracyclin and has intermediate sensitivity against cephoksitine. Irradiation at a dose of 2 kGy increases the value of the break point of his kwetiau. No research was found Salmonella spp. on sample E and all positive samples contain formalin.
